Ingredients

  • 400 g yellow bell peppers (2 yellow bell peppers)
  • 2 Spring Onions
  • 2 tsp green peppercorns (jar; drained)
  • 600 g large slices of hip steak (2 large hip steak slices)
  • Salt
  • Pepper
  • 4 tsp medium‑hot mustard
  • 1 tbsp Rapeseed Oil

Instructions

    Halve the bell peppers, remove seeds and wash. Place on a baking tray and grill under a hot oven broiler for about 10 minutes until the skins darken.

    Remove, cover with a damp kitchen towel and let rest for 10 minutes.

    Meanwhile trim, wash and slice the spring onions into thin rings. Add the green peppercorns to a small bowl.

    Peel the pepper halves, cut into strips and mix with the onion rings.

    Season the hip steak slices with salt and pepper. Spread mustard on one side of each slice, then cut each slice crosswise in half. Distribute the pepper‑onion mixture over the mustard side.

    Fold the meat pieces into pockets, secure with toothpicks. Brush with oil, place in an aluminum tray and grill for about 8–10 minutes per side over a hot grill.
