Grilled Turkey Breast Stuffed with Spinach and Side Salad

Ingredients
- 150 g fresh spinach leaves
- 1 Garlic clove
- soy oil
- Salt
- Pepper (freshly ground)
- nutmeg
- 50 g peeled walnut kernels
- 1 untreated lime
- 700 g pre-cooked turkey breast fillet
- 1.5 cm fresh ginger
- 1 tbsp liquid honey
- 1 tbsp soy sauce

Wash, rinse, and dry the spinach. Peel and finely chop the garlic, then sauté in a pot with 1 tbsp hot oil until translucent. Add the spinach, let it wilt, and season with salt, pepper, and nutmeg. Remove from heat and drain over a sieve. Toast the walnuts in a hot pan without fat, remove, cool, and roughly chop. Wash the lime hot, pat dry, grate its zest, and squeeze out the juice. Mix the lime zest with the walnuts into the spinach and adjust seasoning.

Preheat the grill.

Wash and pat dry the turkey breast, slit longitudinally to create a pocket, and fill it with the spinach mixture. Secure with kitchen twine or sausage needles. Peel and finely grate the ginger. Whisk together honey, salt, pepper, soy sauce, 2 tbsp lime juice, 4 tbsp oil, and ginger; brush this glaze over the turkey breast. Place on the hot grill and cook slowly for 25-30 minutes until golden brown all around.
