Stuffed Beef Fillet à la Noord Hollander

- 600 g beef fillet
- Salt
- ground pepper
- 3 spring onions
- 50 g chorizo
- 200 g Noord Hollander Premium Gouda (Creamy Spicy)
- 50 g cream cheese
- 2 tbsp plant oil
- 800 g starchy boiling potatoes
- Salt
- 2 egg yolks
- 60 g soft butter
- 50 g potato starch
- 2 tbsp finely chopped parsley
- 2 tbsp semolina
- freshly ground pepper
- nutmeg (ground)
- 300 ml beef stock
- 20 ml port wine
- a few fresh sliced tarragon leaves
- 100 ml whipping cream
- Salt
- kitchen twine
- small wooden skewers

Pat the beef fillet dry, slit lengthwise, flatten slightly and season with salt and pepper. Clean and wash spring onions, cut into thin rings. Dice chorizo and 100 g cheese, mix with spring onions and cream cheese, fill the fillet, and secure the opening with kitchen twine or small wooden skewers.

Sear the fillet in heated oil in an oven‑proof pan and bake in a preheated oven at 180 °C (gas: level 3, convection 160 °C) for about 30–40 minutes.

Peel, wash potatoes, boil in salted water for about 20 minutes, then press through a potato masher. Grate remaining cheese, mix with egg yolks, 1 tsp butter, potato starch, parsley and semolina, season with salt, pepper and a touch of nutmeg.

For the sauce, bring beef stock, port wine and tarragon to a boil and reduce by about half. Enrich with cream and season with salt and pepper.

Shape the potato dough into small patties with wet hands and fry in remaining heated butter until golden brown on both sides. Slice the fillet, serve with sauce and potato rounds.
