The Strawberry‑Watermelon ice with mint from Spoonsparrow is the perfect clean‑eating sweet treat.
Ingredients
- 600 g watermelon (about 1/4)
- 250 g strawberries
- 1 Lime
- 3 stems mint
- 50 ml rice syrup
- 20 g crème fraîche (1 tbsp)

Peel the watermelon and cut into pieces; set aside 100 g for later, remove seeds from the rest. Clean, wash, and chop 150 g of strawberries. Cut the lime in half and squeeze out the juice. Wash the mint, pat dry, and pluck the leaves.

Puree the watermelon, strawberries, lime juice, rice syrup, and mint finely. Stir in the crème fraîche.

Fill the mixture into six ice molds. Freeze for about 1 hour, then insert wooden sticks and freeze for another 3 hours until solid.

To serve, release the ice from the molds. Clean, wash, and quarter the remaining strawberries. Arrange the ice with strawberry slices and the reserved watermelon pieces on a plate.
