Grilled watermelon from Spoonsparrow ✌︎ The macadamia mint pesto brings a generous dose of freshness!
Ingredients
- 1 kg watermelon (1 piece)
- 6 macadamia nuts
- 20 g almond slivers (2 tbsp)
- 2 bunches lemon balm
- 0.5 lime
- 8 tbsp maple syrup
Instructions

Cut the watermelon into 8 thick slices with a large knife, removing large seeds.

Slice the flesh from the rind using a small knife.

Chop macadamia nuts and toast them with almond slivers in a non-stick pan over medium heat without oil; let cool.

Wash lemon balm, shake dry, pluck leaves and roughly chop.

Blend cooled nuts and lemon balm very finely with an immersion blender.

Squeeze half a lime and measure 2 tbsp of juice.

Add lime juice and maple syrup to the nut-lemon mixture and blend well.

Heat a grill pan. Briefly grill watermelon slices on both sides. Serve grilled watermelon with macadamia-mint pesto.
