Strawberry Quark Cake with White Chocolate Shavings

Ingredients

  • 4 eggs
  • 100 g sugar
  • 2 tbsp vanilla sugar
  • 1 tsp lemon zest
  • 100 g flour
  • 2 tbsp Cornstarch
  • 1 tsp Baking powder
  • 150 g strawberry jam
  • 400 g Strawberries
  • 500 g quark
  • 100 g sugar
  • 1 tsp lemon zest
  • 500 ml whipping cream
  • 2 packets gelatin
  • white chocolate shavings (for garnish)

Instructions

    Preheat the oven to 180°C fan-forced. Line the springform pan with parchment paper.

    Separate the eggs for the batter. Whisk the yolks with sugar, vanilla sugar and lemon zest until fluffy. Beat the whites stiffly, fold into the yolk mixture, then gently combine with sifted flour, cornstarch and baking powder to form a light dough. Pour into the springform pan and bake in the oven for about 30 minutes until golden brown (test with a skewer). Remove onto a rack and cool.

    Afterwards spread half of the jam over the cake. Place a ring around the base. Wash, trim and slice the strawberries. Distribute half on top of the cake. Mix the quark with sugar and lemon zest until smooth. Whip the cream with gelatin until stiff, fold into the quark mixture. Spread this over the cake and smooth. Arrange the remaining strawberries fan‑shaped and brush with the warmed jam. Chill for at least 2 hours. Before serving sprinkle chocolate shavings and remove the ring.
