Strawberry Dumplings

Ingredients
- 300 g fresh ripe strawberries
- 150 g gelatin sugar (2:1)
- 1 tbsp Lemon Juice
- 400 g quark
- 1 egg
- 50 g flour
- 50 g semolina
- 50 g breadcrumbs
- 2 tbsp Sour cream
- 2 tbsp sugar
- 1 tsp lemon zest
- 8 strawberries
- Salt
- 70 g butter
- 6 tbsp breadcrumbs
- 2 tbsp cinnamon-sugar mix

Wash, trim, and dice the strawberries for the filling. Mix with sugar and lemon juice in a pot and let sit for about 2 hours. Bring to a boil and simmer for approximately 4 minutes until bubbling. When the mixture starts to gel, pour into glasses, seal tightly, and allow to cool.

Drain the quark well and press if necessary. Combine with egg, flour, semolina, white bread crumbs, sour cream, sugar, and lemon zest to form a dough. If the dough is too wet, add more flour. Chill the mixture for about 1 hour.

Using a tablespoon, scoop portions of the dough and shape into dumplings. Flatten each, press a small amount of jam into the center, and seal with dough. Form into balls and place in lightly salted simmering water; cook for about 10 minutes until just set. Melt butter and mix with breadcrumbs and cinnamon-sugar. Remove dumplings from water with a slotted spoon, coat in the breadcrumb mixture, and serve on plates sprinkled with remaining crumbs.
