Strawberry Dough Rings

Ingredients
- 0.25 l milk
- 100 g butter
- 2 tbsp sugar
- 1 packet vanilla sugar
- a pinch of salt
- 150 g flour
- 4 eggs
- 750 g clarified butter (for frying)
- 6 tbsp powdered sugar (for glaze)

Heat milk, butter, salt and sugar until it boils once, then add the flour and stir carefully. Continue cooking over low heat until a lump forms. Transfer to a bowl and gradually fold in the eggs until the dough is very smooth.

Cut parchment paper into 20 cm squares and brush with butter. Fill a pastry bag with the dough and pipe rings onto the paper pieces. Heat clarified butter in a tall pot until bubbles form on a wooden stick. Turn the paper pieces over and hold them above the hot fat, letting the rings slide in. Fry portions of the pastry from both sides for about 4 minutes until golden brown. Remove with a slotted spoon and drain on kitchen paper. Mix powdered sugar with a little water to make a glaze and brush it onto the pastries.
