Ingredients
- 0.5 tsp Salt
- 50 g butter
- 150 g flour
- 4 eggs
- 300 g cream cheese
- 150 g crème fraîche
- 50 g freshly grated cheese (e.g., Bergkäse)
- Salt
- 1 pinch paprika powder (sweet)
- pepper (ground)
- walnut kernels
- olives
- tomatoes
Instructions
-
1.
Preheat the oven to 200°C fan.
-
2.
Bring 250 ml water, salt and butter to a boil in a pot. Add the flour and stir with a wooden spoon until the dough lifts from the pot as a lump and a white film forms on the bottom. Transfer the dough to a bowl, immediately fold in one egg, then add the next egg only when the dough is smooth and elastic again. The dough is ready when it shines and falls off the spoon without tearing. Fill a piping bag with a smooth tip and pipe about 15 dots onto a baking sheet lined with parchment paper.
-
3.
Bake in the preheated oven for about 25 minutes until golden brown, remove and let cool slightly. Cut the puffs in half while still warm (do not separate them) and allow them to cool completely.
-
4.
For the filling whisk together cream cheese, crème fraîche and grated cheese until creamy. Season with salt, paprika and pepper, then fill a piping bag with the mixture. Pipe into the puffs. Optionally pipe a dollop of cheese cream on top and garnish with walnut kernels, olives and tomatoes.
