Strawberry Cream Cheese Tart

Ingredients
- 150 g flour
- 100 g butter
- 50 g sugar
- 1 egg yolk
- 2 Tbsp whipping cream
- 8 sheets white gelatin
- 250 g low-fat quark
- 600 g cream cheese
- 300 g whipping cream
- 70 g sugar
- 800 g strawberries

Preheat the oven to 200°C.

Combine flour, butter, sugar, egg yolk and whipping cream in a bowl and mix well. Knead quickly into a smooth dough, wrap in foil and chill for 1 hour. Roll out to a 26 cm circle and place on parchment paper on a baking tray. Bake in the oven for about 20 minutes.

Soak gelatin in plenty of cold water. Whisk low-fat quark with cream cheese until smooth. Beat whipping cream stiffly. Mix quark mixture with sugar. Squeeze out excess water from gelatin, melt it gently in a small pot and stir into some quark mixture. Quickly fold the melted gelatin into the remaining quark cream. Fold in whipped cream. Wash, clean and halve strawberries. Arrange a few on the shortcrust base and set the tart ring. Spread quark cream over and smooth. Chill for at least 3 hours. Garnish with strawberries and serve cut into pieces.
