Ingredients
- 600 g strawberries
- 0.5 Vanilla pod
- 2 tbsp Raw cane sugar
- 2 tbsp lemon juice
- 75 ml orange juice
- 1 tsp Cornstarch
- 2 tbsp freshly chopped mint

Clean, wash and chop the strawberries. Split the vanilla pod lengthwise and scrape out the seeds with a knife. In a pot bring about half of the strawberries with sugar, vanilla seeds, lemon juice and orange juice to a boil.

Whisk the cornstarch with 1–2 tbsp water and pour it into the strawberry mixture. Let thicken for 1–2 minutes, then remove from heat and puree. Fold in mint and remaining strawberries. Chill the compote for about an hour.
