Stracciatella Ice Cake

The Stracciatella ice cake from Spoonsparrow is especially popular in the summer!

Ingredients

  • 80 g meringue crumbs
  • 500 ml milk
  • 150 g sugar
  • 1 vanilla pod
  • 4 eggs
  • 2 egg yolks
  • 400 ml whipping cream
  • 1 tbsp Lemon Juice
  • 200 g chocolate shavings (dark)

Instructions

    Line a springform pan with plastic wrap and spread the meringue crumbs on the bottom.

    Heat the milk with the sugar and split vanilla pod until it boils. Remove from heat and let steep for about 10 minutes. Separate the eggs; whisk all yolks in a bowl. Strain the vanilla-infused milk into the yolks. Whisk over a hot water bath until creamy (remove from heat). Cool by stirring, possibly over a cold water bath. Beat the cream and egg whites with lemon juice separately until stiff peaks form. Fold the chocolate shavings into the vanilla custard, then gently fold in the meringue.

    Pour into the pan and spread evenly. Freeze for at least 5 hours.

    Before serving, remove from the pan, lift off the plastic wrap, and cut the ice cake into pieces.
