Stir‑fried green asparagus with sea‑ice shrimp from Spoonsparrow is a light gourmet dish.

Ingredients

  • 500 g Green Asparagus
  • 1 tsp germ oil (corn germ oil)
  • 100 ml classic vegetable broth
  • 3 stems coriander
  • 50 g shrimp (sea‑ice shrimp; cooked and peeled)
  • 2 tbsp Light soy sauce
  • Salt
  • Pepper

Instructions

    Wash the asparagus, trim the woody ends, peel the lower third of each stalk and cut diagonally into thirds.

    Heat oil in a wok or large pan. Pour in half the broth and cook the asparagus over high heat, stirring, for 7–10 minutes until firm.

    Wash coriander, shake dry and pluck the leaves.

  4. 4.

    Rinse shrimp briefly, drain and pat dry with paper towels. Add the remaining broth and shrimp near the end of cooking the asparagus and warm through.

    Season everything with soy sauce, salt and pepper. Sprinkle the stir‑fried green asparagus with coriander and serve immediately.
