Fruity Asparagus Skillet

A surprisingly delightful and clever combination of asparagus with mango makes this dish a true highlight among skillet recipes.

Ingredients

  • 500 g Green Asparagus
  • 250 g Chicken breast fillet
  • 1 tbsp Sunflower oil
  • 2 tbsp Curry Powder
  • 400 g mango (1 mango)
  • 6 sprigs coriander
  • 400 ml coconut milk
  • Salt
  • Pepper

Instructions

    Wash the asparagus, trim the ends and peel the lower third. Cut the stalks diagonally into pieces about 3 cm long.

    Rinse the chicken breast fillet, pat dry and cut into medium cubes.

    Heat sunflower oil in a pan and brown the chicken cubes on all sides. Add the asparagus pieces and sauté for 2–3 minutes.

    Sprinkle curry powder over the mixture and pour in 50 ml water.

    Meanwhile peel the mango, slice the flesh away from the pit and dice it small. Wash the coriander, shake dry and pluck the leaves.

    Stir the mango cubes into the pan with coconut milk. Season generously with salt and pepper and cook on medium heat for 3–4 minutes, stirring occasionally. Sprinkle with coriander before serving.
