Ingredients
- 20 g Ginger
- 2 shallots
- 300 g carrots
- 300 g mie noodles
- 4 tbsp soy oil
- Salt
- Pepper
- 4 tbsp soy sauce
- 4 stalks coriander leaves

Peel and finely dice the ginger and shallots. Peel, wash, and cut the carrot into sticks. Cook the noodles according to package instructions.

Heat oil in a wok and stir‑fry the carrot with the shallot and ginger; add salt and pepper. Drain the noodles and fold them in, cooking everything for 2 minutes more and seasoning with soy sauce.
