Ingredients
- 2 cups wild rice
- 3 cups water
- 1 tsp sea salt
- 2 tbsp butter
- 2 tbsp chopped parsley
- 1 eggplant
- 1 green bell pepper
- 1 red bell pepper
- 4 tomatoes
- 1 Zucchini
- 1 onion
- 2 Garlic cloves
- 3 tbsp oil
- 1 tsp dried thyme
- 1 tsp Dried oregano
- salt (pepper)
Instructions

Bring wild rice to a boil in a pot with water, add salt and cook for about 30 minutes. Wash, dry, and slice eggplant, bell peppers, tomatoes, and zucchini. Slice onion thinly and finely chop garlic.

Heat oil in a large pot, sauté eggplant, onion, and garlic. Dice remaining vegetables and add them. Season with oregano, thyme, pepper, and salt. Cover and cook over medium heat for about 10 minutes. Turn off the stove under the rice and stir vigorously. Add butter and let rest for about 5 minutes.
