Stew with Green and White Beans

A hearty stew featuring fresh green and white beans from the vegetable soup category. Try this and other recipes from Spoonsparrow!

Ingredients

  • 1 onion
  • 2 stalks celery
  • 1 Green Chili Pepper
  • 2 tbsp olive oil
  • 800 ml vegetable broth
  • 500 g green beans
  • 400 g canned white beans
  • 2 tbsp freshly chopped parsley
  • Salt
  • 150 g Feta

Instructions

    Wash, trim and finely dice the onion and celery. Wash, halve, deseed and finely chop the chili pepper. Sauté all together in hot oil until translucent, then deglaze with broth and simmer gently for about 10 minutes.

    Wash, trim and cook green beans in salted water for about 8 minutes. Drain white beans in a sieve and add them to the soup with the green beans. Let heat through for a few more minutes, stir in parsley, and season with salt.

    Serve in bowls and crumble feta on top. Optionally serve with toasted bread.
