Steirian Salad

A hearty Austrian treasure featuring pumpkin: all the best of pumpkin in a simple dish.

Ingredients

  • 2 tbsp pumpkin seeds
  • 150 g pickled pumpkin (jar)
  • 200 g chicken aspic
  • 1 small red onion
  • 1 bunch radishes
  • 150 g tomatoes (2 tomatoes)
  • 2 tbsp Apple cider vinegar
  • 2 tsp mustard
  • Salt
  • Pepper
  • 4 tbsp pumpkin seed oil
  • 100 g lamb's lettuce
  • 100 g Arugula

Instructions

    Lightly toast the pumpkin seeds in a dry pan until fragrant, then remove and let cool.

    Drain the pickled pumpkin.

  3. 3.

    Slice the aspic into 1 cm wide strips.

  4. 4.

    Peel the onion and finely shave it into thin slices.

  5. 5.

    Trim the radishes and slice them thinly. Wash the tomatoes, cut off the stems in a wedge shape, then halve them.

    Crush half of the cooled pumpkin seeds in a mortar. Whisk together vinegar, mustard, salt, and pepper until smooth. Stir in the pumpkin seed oil.

    Wash and dry the lamb's lettuce and arugula by spinning them in a salad spinner.

    Combine the greens with 3/4 of the pumpkin sauce on a plate. Distribute the remaining ingredients over the top and drizzle with the rest of the sauce before serving.
