Ingredients
- 600 g stonefish fillet
- 3 stalks sage (or 12 leaves)
- 12 slices pancetta
- pepper (ground)
- 1 tbsp Lemon Juice

Wash the stonefish fillets, pat dry and cut into eight equal pieces.

Wash the sage, shake off excess water and pluck the leaves. Place one sage leaf on each fish piece, wrap with a slice of pancetta, and place on a hot grill. Grill for 6-8 minutes while turning, then season with pepper and drizzle with lemon juice. Serve with tomato-chili pesto.
