Steamed Shrimp

Ingredients
- 6 kaffir lime leaves
- 500 g large shrimp tails (headless)
- 2 lemongrass stalks
- 30 g ginger
- 1 red chili pepper
- 1 handful Thai basil leaves (washed)
- lime juice
- Fleur de sel
Instructions

Line the steamer basket of a pot with kaffir lime leaves. Wash and pat dry the shrimp, then arrange them on top. Trim the lemongrass and cut it lengthwise in half.

Slice the ginger into rounds and add it with the lemongrass to the pot. Add about 5 cm of water and bring to a boil so that the shrimp can later absorb the aroma of the spices through steam.

Place the steamer basket in the pot, cover, and steam the shrimp over low heat for 2 to 3 minutes. Remove from heat and let rest another 2 to 3 minutes so the shrimp do not dry out.

Peel, deseed, and finely chop the chili pepper; roughly chop the basil. Season the shrimp with lime juice and Fleur de sel, then sprinkle with chili and basil. Serve with carrot‑coriander purée or mayonnaise.
