Steamed Sea Bass Rolls

Ingredients
- 1 Zucchini
- 1 red or yellow bell pepper
- 4 tomatoes
- 2 onions
- 1 Garlic clove
- 2 tbsp olive oil
- Salt
- Pepper
- 8 sea bass fillets
- wooden skewers
- 200 ml dry vermouth
- 1 sprig rosemary
- 1 egg yolk
- 50 g cold butter

Wash and clean the vegetables. Dice zucchini and bell pepper very finely. Score tomatoes, blanch in boiling water for 1 minute, shock with ice water and peel. Quarter tomatoes, remove seeds and dice flesh. Peel and dice onions and garlic.

Heat olive oil in a pan. Sauté vegetables, onions and garlic while turning for 6-8 minutes. Season with salt and pepper and keep warm.

Rinse sea bass fillets. Season with salt and pepper. Roll each fillet around a wooden skewer and secure. Place in a steamer basket. Bring vermouth and rosemary to a boil in a pot, then place the basket inside. Steam rolls for about 10 minutes.

Reduce the broth until thickened, strain, and pour into a saucepan. Whisk in egg yolk. Stir in cold butter pieces. Do not let the sauce boil again. Season with salt and pepper. Arrange vegetables and sea bass rolls on a large plate and pour sauce over them.
