Scallop Rolls

Ingredients
- 4 scallop fillets
- juice of 0.5 lemons
- Salt
- ground pepper
- 4 tsp creamy horseradish (from jar)
- 5 stems tarragon
- wooden skewers
- 200 ml fish stock
- 1 can saffron powder
- 250 ml Whipping Cream
- a few spritzes lemon juice
- 1 red and yellow bell pepper
- 1 onion
- 1 tbsp Olive Oil

Drizzle scallop fillets with lemon juice. Season with salt and pepper, spread horseradish on them. Rinse tarragon, pluck the leaves and place them on the scallops. Roll the fillets and secure with wooden skewers.

Bring fish stock to a boil. Add scallop rolls and simmer gently for about 5 minutes until cooked. Remove the rolls. Reduce the stock by half. Stir in saffron powder and pour in cream. Let the sauce thicken into a creamy consistency. Season with lemon juice, salt, and pepper. Return the scallop rolls to the sauce and keep warm.

Clean, rinse, and chop the bell pepper. Peel and dice the onion. Heat oil in a pan. Sauté the pepper and onion for 8-10 minutes. Season with salt and pepper. Plate everything together, garnish with tarragon if desired.
