Steamed Red Snapper
The steamed red snapper fillet is known for being exceptionally low in fat. This recipe is simple and ideal for discerning fish lovers.
Ingredients
- 10 g ginger (1 piece)
- 1 Organic Orange
- 900 g red snapper (1 ready-to-cook fillet)
- 4 Spring Onions
- 1 Garlic clove
- 4 tbsp soy sauce
- 1 tsp raw cane sugar
- 2 tbsp Rapeseed oil
- 1 tbsp Sesame oil

Peel and finely chop the ginger.

Wash the orange under hot water, dry it, thinly peel the zest with a vegetable peeler and cut into very fine strips. Halve the orange and squeeze out the juice.

Rinse the fish inside and out under running cold water. Pat dry and lightly score the skin with a sharp knife.

Lay two sheets of aluminum foil (50x30 cm each) on top of each other, fold the edges up to form a long basket shape. Place the fish in the center.

Distribute orange juice, zest and half the ginger over the fish. Put it in a steamer basket and steam over boiling water for 15-20 minutes.

Meanwhile, trim, wash and cut the spring onions into thin strips. Peel and finely chop the garlic.

Combine the spring onions, garlic and remaining ginger in a bowl. Stir in soy sauce and sugar. Remove the fish from the steamer, place it on a serving plate or large dish, and drizzle with the mixture.

Heat rapeseed and sesame oil very hot in a small pot. Pour over the fish immediately before serving.
