Steak with Green Sauce

Ingredients

  • 1 bundle coriander (20 g)
  • 50 g spring onions
  • 75 g roasted salted American pistachios (40 g shelled)
  • 80 ml olive oil
  • 0.5 lime
  • Salt
  • Pepper
  • 450 g waxy potatoes
  • 400 g ribeye

Instructions

    Wash and dry coriander and spring onions, shake off excess moisture and roughly chop. Blend with pistachios and 70 ml olive oil in a food processor until smooth. Squeeze the lime, add juice to the green sauce, season with salt and pepper.

    Wash potatoes, cut into large pieces with skins on, boil in salted water for 10 minutes, then drain. Heat remaining olive oil in a pan. Add potatoes and fry over medium heat, turning occasionally, until golden brown in about 15 minutes.

    Season steaks with salt and pepper on both sides and grill (or sear in a pan) to desired doneness. Remove from grill, let rest for 5 minutes. Serve steaks with green sauce and roasted potatoes.
