Ingredients
- 300 g band noodles
- 3 Carrots
- 4 hip steaks (150 g each)
- Salt
- pepper (ground)
- coriander powder
- 3 tbsp clarified butter
- 50 g pecorino cheese (shredded)
- lemon balm leaf
Instructions

Cook the noodles in salted water until al dente.

Peel the carrots and julienne them lengthwise into thin strips like band noodles; simmer with the noodles for 4 minutes.

Season the steaks with pepper and coriander, then sear each side in hot clarified butter for about 3 minutes. Remove, season with salt, and wrap in foil.

Drain the noodles, add the clarified butter to the pan, toss the noodles briefly, and season with salt and pepper.

Plate the steaks with the noodles and garnish with pecorino shavings and lemon balm.
