Ingredients
- 600 g stalk broccoli
- Salt
- 4 tbsp olive oil
- 2 Spring Onions
- 200 ml dry white wine
- 100 ml whipping cream
- 2 egg yolks
- 4 beef steaks about 200 g each (e.g., ribeye)
- ground pepper
Instructions

Rinse the broccoli and place it in a steamer basket. Salt, drizzle with 1 tbsp oil, and steam over hot water covered for about 8 minutes.

Rinse spring onions, trim, and cut diagonally into rings. Briefly sauté in 1–2 tbsp hot oil. Deglaze with wine and simmer 2–3 minutes. Remove from heat, whisk cream with egg yolks and stir until the sauce thickens (do not boil). Season with salt.

Rinse steaks, pat dry, and season with salt and pepper. Grill in remaining oil in a grill pan for 2–5 minutes each side depending on thickness and desired doneness.

Plate with broccoli and sauce.
