Steak with Asparagus and Mushroom Sauce

Ingredients
- 4 steaks (220–280 g each)
- Sea salt
- freshly ground pepper
- 3 tbsp vegetable oil
- 500 g Green Asparagus
- 350 g small brown button mushrooms
- 0.5 garlic clove
- 1 tsp powdered sugar
- 150 ml dry red wine
- 150 ml beef broth
- 2 tbsp cold butter

Take the meat out of the refrigerator about 30 minutes before grilling to make it more tender during cooking.

Preheat the oven to 120 °C (250 °F) with both top and bottom heating. Wash, pat dry, season the steaks with salt and pepper, then sear them in a grill pan over high heat with 2 tbsp hot oil on both sides until crisp.

Place the steaks on a rack (with a fat pan underneath) in the oven and bake for 15–30 minutes depending on desired doneness.

Meanwhile, wash and trim the asparagus, then boil it in salted water for about 8 minutes until al dente. Clean the mushrooms, slice them thinly, and slowly brown them in the remaining hot oil in a wide pan for about 5 minutes.

Drain the fat from the grill pan and use the drippings to caramelize the sliced garlic with powdered sugar until golden brown. Deglaze with red wine, let it reduce slightly, then add beef broth. Reduce for 4–5 minutes and season with salt and pepper. Strain through a sieve and stir in cold butter pieces.

Arrange the steaks and asparagus on plates. Top the steaks with mushrooms, drizzle with sauce, and serve. Roasted potato wedges pair well with this dish.
