Chicken with Beer Sauce

Ingredients

  • 4 chicken drumsticks
  • 4 chicken breast fillets (with skin)
  • 8 shallots
  • 100 g mushrooms
  • Salt
  • Pepper (freshly ground)
  • 100 g smoked pork belly
  • 400 ml dark beer
  • 1 tbsp freshly chopped parsley

    Soak a Romertopf pot.

    Rinse the meat and pat dry. Cut each breast fillet in half. Peel and halve the shallots. Clean and halve the mushrooms.

    Season the chicken pieces with salt and pepper, dice the pork belly, fry it in a hot pan until crisp, then brown the meat on all sides. Remove the meat and deglaze the pan with 100 ml beer. Mix the mushrooms, shallots, deglazed liquid and parsley; season with salt and pepper. Place this mixture in the Romertopf, lay the chicken pieces on top, pour the remaining beer over them, seal the pot and put it in a cold oven. Bake at 200 °C (top and bottom heat) for about an hour. Serve with fresh baguette if desired.
