Steak mit Senfkruste

Ingredients
- 100 g white onions
- 140 g butter
- 80 g toast bread
- 1 tsp coarse mustard
- 20 g breadcrumbs
- 4 beef filet steaks (about 180 g each, cut from the center)
- Salt
- pepper (ground)
- 4 Tbsp vegetable oil (for frying)
- 100 ml beef stock

For the crust, peel and finely dice the onion. Sauté in 20 g butter until translucent. Transfer to a bowl. Drain the toast bread, cut into fine cubes, and roast in 20 g butter until golden; add to the onions. Mix in 100 g softened butter, mustard, and breadcrumbs; season with salt and pepper. Spread onto a ~1 cm thick sheet of aluminum foil. Cover and refrigerate overnight. Season the steaks with salt and pepper.

Heat oil in a pan for the steaks and sear each side for about 3-4 minutes. Place the steaks on a heat‑proof platter. Use an oval cutter to cut ovals the size of the steaks and lay them on top. Deglaze the pan with stock, stir until bubbling, strain through a sieve, and season. Briefly broil the steaks under a preheated grill until the crust gains light color. Plate, pour the sauce over, and serve with colorful salad.
