Ingredients

  • 175 g soft butter
  • 175 g sugar
  • 3 eggs
  • 175 g flour
  • 1 tsp Baking powder
  • a pinch salt
  • 150 g strawberry jam
  • 350 ml double cream 48% fat
  • dried strawberries (for decoration)

Instructions

    Preheat the oven to 170°C fan. Line the bottom of a springform pan with parchment paper.

    Beat the butter and sugar until fluffy. Gradually add the eggs, whisking until creamy. Sift in the flour, baking powder, and salt all at once, then mix into a smooth, soft batter. Pour the batter into the pan and level the surface. Bake for 35-40 minutes.

    When the moist cake holds its shape when lightly pressed, it is done. Remove from oven and let cool. Then (best with a small knife) release from the pan and cut horizontally in half. Spread jam on the bottom layer.

    Whip the cream to thick, creamy consistency. Spoon about half of the cream over the jam and spread evenly. Place the top layer on and spread the remaining cream. Chop the dried strawberries, sprinkle over the cake, and serve in pieces.
