Ingredients

  • 375 g flour
  • 1 tsp Baking powder
  • 200 g sugar
  • 1 packet vanilla sugar
  • 250 g butter
  • 1 Egg white
  • 120 g ground hazelnuts
  • 150 g quince jam
  • 100 g powdered sugar
  • sugar

Instructions

    Knead flour, baking powder, sugar, vanilla sugar, butter pieces, egg white and ground hazelnuts into a dough, shape it into a ball and wrap in cling film. Chill for 30 minutes.

    Roll the dough on a floured surface to about 0.4 cm thickness and cut out star-shaped cookies (≈6 cm diameter) with a star cookie cutter. From half of the cookies, cut small stars in the center. Place cookies on parchment-lined baking sheet and bake at 180 °C for about 12 minutes. Remove and cool.

    Mix powdered sugar with a little water to make a thick glaze and brush it over the cookies, leaving the star holes exposed. Use a small squeeze bottle to outline the contours with glaze. Sprinkle with crystal sugar and let dry.

    Warm the quince jam and spread it on the remaining cookies without stars. Press slightly and allow to dry.
