Ingredients

  • 150 g butter
  • 75 g powdered sugar
  • 1 egg yolk
  • 1 packet vanilla sugar
  • 1 pinch salt
  • 1 tsp lemon zest
  • 250 g flour
  • 100 g apricot jam
  • powdered sugar (for dusting)

Instructions

    Cream together butter and powdered sugar. Mix in egg yolk, vanilla sugar, salt, and lemon zest. Sift in flour and knead quickly. Wrap dough in cling film and chill for about 1 hour. Roll dough to a thickness of approximately 3 mm.

    Use a round cutter (about 3 cm diameter) to cut out cookies. From half the cookies, punch holes with small letter cutters or cut letters out. Bake in a preheated oven at 200°C on the middle rack for about 12 minutes.

    Heat apricot jam in a small saucepan until liquid, then strain through a sieve. Spread jam over all cookies, place the pierced ones on top, press lightly, and let the jam dry. Dust cookies with powdered sugar just before serving.
