Spinach with Cream Cheese and Potato Crown

Ingredients

  • 700 g young spinach leaves
  • 1 onion
  • 1 Garlic clove
  • 60 g clarified butter
  • 4 pickled, dried tomatoes (in oil)
  • Salt
  • Pepper (freshly ground)
  • nutmeg
  • 4 medium firm-cooking potatoes
  • 100 g grainy cream cheese
  • 20 g butter (crumbles)

Instructions

    Preheat the oven to 200°C (Oven rack in middle). Rinse, clean, wash and dry spinach leaves. Peel onion and garlic clove and dice finely. Heat 20 g clarified butter in a pot and sauté onion until translucent. Add spinach and cook until wilted, turning occasionally. Wash tomatoes, chop small and mix with garlic into the spinach. Briefly stir vegetables and season with salt, pepper and nutmeg.

    Peel potatoes and slice as thin as possible or shave into ribbons. Heat remaining clarified butter in a skillet. Remove from heat. Arrange half of potato slices on the skillet bottom leaving a 2 cm border. Spread spinach over them, top with cream cheese, then arrange remaining potato slices overlapping slightly to create a crown. Season with salt, pepper and sprinkle butter crumbles. Place skillet in preheated oven and bake 15-20 minutes until golden brown. Remove immediately and serve.
