Spinach Tartlets

Ingredients

  • 20 g fresh yeast
  • 140 ml milk
  • 300 g flour
  • Salt
  • freshly ground pepper
  • 2 shallots
  • 2 Garlic cloves
  • 600 g frozen spinach
  • 2 tsp Curry powder
  • 2 tbsp oil
  • 4 plum tomatoes
  • 200 g cottage cheese
  • chives (for garnish)

Instructions

    Dissolve the yeast in lukewarm milk. Add flour, salt and pepper and knead into a firm dough. Cover and let rise in a warm place for 30 minutes.

    Preheat the oven to 180°C. Peel and finely chop the shallots and garlic. Thaw the spinach in a pot over medium heat. In another pan sauté the shallots, garlic and curry powder in oil. Add the spinach and season with salt and pepper. Steam on medium heat until the liquid evaporates (do not cover).

    Grease eight 12‑cm molds with oil. Roll out the dough and line the molds. Blind bake for 5 minutes. Slice the tomatoes crosswise, blanch in boiling water, peel and slice into rounds. Distribute the spinach mixture over the molds, top with tomato slices, then spread cottage cheese on top. Bake for 20 minutes. Garnish with chives before serving.
