Ingredients

  • 125 g flour
  • 250 ml milk
  • 2 Eggs
  • Salt
  • 200 g spinach leaves
  • a little clarified butter (for baking)
  • 2 tbsp sesame seeds
  • 250 g low-fat quark
  • 100 g high-quality cheese
  • 200 g double cream fresh cheese
  • 1 onion
  • salt (ground)
  • pepper (ground)

Instructions

    Whisk flour with milk, eggs and a pinch of salt. Let the batter rest for 30 minutes. Rinse spinach leaves, wash thoroughly, trim, and blanch in salted water for 1-2 minutes. Drain on a sieve and rinse with cold water. Pat dry between kitchen towels. Mix quark, high-quality cheese and fresh cheese together. Peel and finely dice onion. Stir into the cheese mixture and season with salt and pepper.

    Heat 1–2 tsp clarified butter in a non-stick pan for each pancake. Add a bit of spinach and sesame seeds, then pour a small ladleful of batter. Cook until the underside is golden brown. Flip and cook until golden brown again. Repeat until all batter is used. Stack pancakes and keep warm at 50 °C in the oven. Spread cheese cream on the pancakes and fold them together for serving.
