Ingredients

  • 800 g potatoes
  • 1 Avocado
  • 100 g salami (sliced)
  • 4 tomatoes
  • 2 shallots
  • 1 EL Capers
  • 2 EL chopped parsley
  • 150 ml Vegetable broth
  • 4 EL sunflower oil
  • 3 EL white wine vinegar
  • Salt
  • pepper (ground)

Instructions

    Wash potatoes thoroughly and steam for about 30 minutes.

    Cut salami into strips.

    Wash tomatoes, remove stems and cut into wedges.

  4. 4.

    Peel shallots and slice into thin strips.

  5. 5.

    Peel avocado, halve it, remove the pit and cut crosswise into slices. Combine with salami, tomatoes, shallots, capers, parsley, warm broth and vinegar in a bowl. Peel potatoes, let them cool slightly and slice. Fold the salad together and let rest for about 10 minutes. Season with salt and pepper before serving.
