Spinach Salad with Raw Ham, Croutons and Fried Eggs

- 150 g young spinach
- 4 slices of white bread
- 8 quail eggs (or 4 chicken eggs as substitute)
- 6 slices pancetta
- Salt
- freshly ground pepper
- cold‑pressed olive oil
- freshly squeezed lemon juice
- clarified butter

Wash and dry the spinach. Cut the white bread into small cubes and fry them in 2 tablespoons of hot oil in a pan until golden brown all around; season with salt. Slice the pancetta into strips and roast it in a pan without adding any fat. Heat 1 tablespoon clarified butter in a pan and cook the eight small quail fried eggs, seasoning with salt and pepper.

Arrange the spinach leaves on plates. Mix 4 tablespoons oil, 2–3 tablespoons lemon juice, 50 ml water, salt, and pepper to make a salad dressing. Drizzle each portion of spinach with the dressing, then sprinkle croutons and ham strips over it. Place two fried eggs on top of each serving and serve immediately.
