Spinach Salad with Avocado

A vibrant spinach salad featuring avocado and garden cress blossoms: a striking dish with pleasantly mild-spicy flavor. Great as an appetizer or for guests!

Ingredients

  • 150 g young spinach leaves
  • 0.5 lemon (more or less to taste)
  • 1 tbsp elderflower syrup
  • Salt
  • Pepper
  • 1 tbsp germ oil
  • 175 g small ripe avocado (1 small ripe avocado)
  • 12 garden cress blossoms

Instructions

    Wash the spinach thoroughly, dry and trim.

    Squeeze half a lemon. Whisk 2 tbsp lemon juice with elderflower syrup, salt, pepper and oil to make a salad dressing and taste.

    Peel the avocado, halve it and remove the pit. Cut the flesh into thin strips.

    Gently toss the avocado slices with the dressing. Add the spinach and fold in gently. Season with salt and pepper and serve in portions.

    Wash the garden cress blossoms briefly if desired, dry by shaking. Garnish the salad with them and serve.
