Salmon Terrine

Ingredients

  • 6 sheets white gelatin
  • 150 g quark
  • 150 g cream cheese
  • 4 capers
  • 200 g Salmon fillet
  • 2 tbsp milk
  • Salt
  • white pepper (ground)
  • 1 tbsp Lemon Juice
  • 2 tsp grated lemon zest
  • 75 g whipping cream
  • 1 tbsp chopped dill sprigs
  • 2 tsp capers
  • 250 g smoked salmon (thin slices)

Instructions

    Soak gelatin in cold water. Mix cream cheese with quark and milk, seasoning with salt, pepper, lemon juice, and zest.

    Whip cream until stiff peaks form. Blend salmon pieces with capers into a puree, then fold in. Melt gelatin in a small pot over low heat, then stir it into 2 tbsp of the cheese mixture; combine this with the remaining cheese blend and fold in the whipped cream.

    Line a loaf pan with plastic wrap. Line the bottom and sides of the pan with smoked salmon slices, then fill with the salmon-cheese mixture. Cover and refrigerate overnight to set. Remove from the pan, carefully lift off the plastic wrap, and serve garnished with lemon wedges and capers.
