Spinach Quiche

Ingredients
- 400 g flour
- 200 g butter
- 1 pinch salt
- Pepper
- 900 g spinach
- 2 tsp thyme leaves
- 2 shallots
- 50 g Pine nuts
- 2 tbsp butter
- 100 ml milk
- 100 ml heavy cream
- 2 egg yolks
- 1 tbsp flour
- 4 tbsp freshly grated Parmesan
- Salt
- freshly ground pepper
- 4 eggs
- oil (for the pan)
Instructions

Knead flour with butter, salt, pepper and about 50 ml water into a dough, then shape it into a ball, wrap in cling film and refrigerate for 30 minutes.

Peel and finely chop shallots and garlic.

Wash, dry, and roughly chop spinach.

Heat butter in a pan and sauté shallot, garlic, and spinach for about 10 minutes; finally stir in pine nuts and thyme, seasoning with salt and pepper.

Whisk egg yolks with milk, cream, flour, and Parmesan, seasoning with salt and pepper.

Brush a springform pan with oil. Peel eggs and cut them lengthwise in half.

Roll 2/3 of the dough on a floured surface into a circle slightly larger than the pan, lining the pan and forming a rim. Add half of the spinach mixture and arrange the halved eggs on top. Pour remaining spinach over it and drizzle with the egg cream. Roll the remaining dough into a round lid and cover the spinach. Press edges together and cut a small hole in the center.

Bake in a preheated oven at 200°C for about 50-60 minutes until golden brown.
