Spinach Quark Patties

Vegetarian snack with a bite from Bavaria: Spinach quark patties are a real energy booster.

Ingredients

  • 200 g frozen spinach
  • 300 g radish (0.5 kg)
  • 1 bunch radishes
  • Salt
  • 1 Red Onion
  • 1 bunch chives
  • 2 tbsp sweet mustard
  • 4 tbsp rapeseed oil
  • 2 tbsp Apple cider vinegar
  • Pepper
  • 400 g Low-fat quark
  • 0.5 clove garlic
  • nutmeg
  • 2 Eggs
  • 50 g whole grain breadcrumbs
  • 2 tbsp wheat flour Type 1050
  • 2 tbsp olive oil

Instructions

    Thaw the spinach. Peel, wash, and julienne the radish and radishes, place them in a bowl, and salt lightly.

    Peel the onion and slice it thinly. Wash the chives, shake them dry, and cut them into fine rings.

    Drain the water that has formed from the radish and radishes in the bowl. Mix the two spicy vegetables with the onion and chives. Mix mustard, rapeseed oil, and vinegar, season with salt and pepper, and mix with the salad ingredients.

    Place the quark in a kitchen towel and squeeze out firmly.

    Peel and finely chop the garlic. Grate a little nutmeg. Mix the quark, eggs, breadcrumbs, and garlic with salt, pepper, and nutmeg.

    Squeeze the thawed spinach in the palms of your hands, cut it into small pieces, and fold it into the quark mixture.

    Shape the mixture into 8 flat patties with damp hands.

    Coat the patties in flour and fry them in olive oil over medium heat for 4-5 minutes until golden brown. Serve with the radish and radish salad.
