Curry Noodles with Pak Choi and Fried Tofu
These curry noodles with pak choi and fried tofu from Spoonsparrow are delicious time and time again.
Ingredients
- 400 g Tofu
- 4 tbsp olive oil
- 2 tbsp Soy sauce
- 400 g Soba noodles (Japanese buckwheat noodles)
- Salt
- 600 g large Pak Choi (2 large bok choy)
- Pepper
- 2 tsp Curry powder

Pat the tofu dry and cut it into very small cubes. Heat 2 tbsp of oil in a pan. Fry the tofu cubes in the oil over medium heat, turning frequently, for 5-7 minutes until crispy. Deglaze with soy sauce and let simmer for 2 minutes. Remove from the pan and set aside.

Cook the noodles according to package instructions in plenty of boiling salted water until al dente. Then drain in a sieve and let them drip.

Meanwhile, clean, wash, and cut the pak choi into fine strips. Heat 1 tbsp of oil in the pan. Stir-fry the pak choi for 3 minutes. Season with salt and pepper.

Mix the remaining oil with curry powder and a little salt. Mix the seasoned oil into the drained noodles. Serve the noodles with pak choi and fried tofu.
