Gorgonzola Cream Soup

Cheese lovers, beware! The Gorgonzola cream soup from Spoonsparrow is easy to prepare and a hearty spoonful of delight.
Ingredients
- 2 tbsp flour
- 200 ml white wine
- 1 onion
- 2 tbsp butter
- 200 g Gorgonzola cheese
- 650 ml vegetable stock (instant)
- 2 Tomatoes
- Salt
- black pepper (freshly ground)
- 0.5 bunch Basil

Whisk the flour with a little wine until smooth. Peel and finely dice the onion, then sauté in hot butter in a pot until translucent. Add roughly chopped Gorgonzola and melt over low heat. Pour in the remaining wine, bring to a boil, then stir in the whisked flour mixture. Add the vegetable stock and continue boiling while stirring; reduce heat and let simmer for several minutes, stirring occasionally. Meanwhile, wash the tomatoes, quarter them, remove seeds, and cut into wedges.
