Spinach Filled Puff Pastry

Ingredients

  • 20 g yeast
  • 450 g flour
  • 1 tsp salt
  • 1 bunch scallions
  • 600 g fresh spinach
  • 200 g sheep cheese
  • Salt
  • pepper (ground)
  • 0.5 tsp cumin
  • 4 tbsp olive oil

Instructions

    Crush the yeast into a bowl and stir in about 200 ml lukewarm water until smooth. Mix with flour and salt to form a smooth dough, cover and let rise in a warm place for 45 minutes.

    Wash the spinach thoroughly and blanch it in a pot of hot water until wilted; drain and squeeze out excess moisture.

    Trim the scallions, cut off ends, wash and slice into thin rings. Roughly chop the spinach and mix with scallions and spices. Crumble the cheese and fold in.

    On a floured surface knead the dough once and divide it into eight portions. Roll each portion into an oval flat disc. Brush a baking sheet with oil and place two discs on it; spread some filling, drizzle olive oil, fold edges inward, brush again with oil, and bake at 225 °C for about 15 minutes. Repeat with remaining discs.
