Ingredients

  • 1 kg fresh spinach
  • Salt
  • 3 onions
  • 1 Garlic clove
  • 1 tbsp butter
  • 175 g diced bacon
  • Pepper (freshly ground)
  • nutmeg
  • 1 tbsp Lemon Juice
  • 1 egg
  • 150 g Emmental cheese
  • 1 tbsp finely chopped parsley
  • 100 g soft goat cheese
  • butter (for the dish)

Instructions

    Preheat the oven to 180°C fan. Wash, rinse and collapse the spinach in lightly salted boiling water. Drain, shock, dry and squeeze out excess liquid. Roughly chop. Peel and dice one onion and the garlic.

    Sauté both in hot butter in a pan. Add bacon briefly. Then add spinach and season with salt, pepper, nutmeg and lemon juice. Peel remaining onions, halve and cut into rings. Separate egg whites from yolks. Grate Emmental and mix with yolk, onions, salt, pepper, parsley and crumbled goat cheese.

    Whisk egg whites until stiff peaks form and fold gently in. Transfer spinach-bacon pan to a buttered baking dish and spread the cheese mixture over it. Bake 25-30 minutes until golden brown. Remove and serve immediately.
