Ingredients

  • 300 g spinach
  • Salt
  • 1 stalk leek
  • 10 g butter
  • Pepper (freshly ground)
  • 1 egg
  • 75 g quark
  • 2 tbsp parmesan
  • nutmeg
  • butter (for greasing the pan)

Instructions

  1. 1.

Wash, rinse, and trim the spinach; blanch in boiling salted water until wilted, then drain in a colander and shock with cold water. Let it dry, squeeze out excess liquid, and finely chop.

  2. 2.

Clean the leek, split lengthwise, wash, and cut the white and light green parts into strips.

  3. 3.

Heat butter in a pan and sauté the leek strips. In a bowl combine spinach, leek, egg, quark, and parmesan. Season with salt, pepper, and nutmeg. Grease a loaf pan with a little butter and pour in the mixture. Bake in a preheated oven at 180°C for about 30 minutes.

  4. 4.

Remove the spinach cake from the oven, cover with foil, and let rest for another 10 minutes. Slice into rounds and serve warm.
