  • 400 g starchy potatoes
  • 6 carrots
  • 2 large onions
  • 2 parsley roots
  • 0.25 head of celery root
  • 2 tbsp oil
  • 0.5 l meat broth (from a jar or homemade)
  • 2 tbsp chopped parsley
  • 1 tsp Caraway seeds
  • Salt
  • Pepper
  • parsley for garnish

Instructions

  1. 1.

Wash the meat and cut into equal cubes. Separate marrow from the bones and slice them. Peel and dice the potatoes and celery root. Peel the onions, halve them and cut into rings. Peel carrots and parsley roots, then slice them. Heat oil in a large pot and brown the meat cubes all around. Remove.

  2. 2.

Place slices of one marrow bone on the bottom of the pot. Layer meat, potatoes and vegetables in turns. Sprinkle each layer with salt, pepper and caraway. Finish by adding the remaining marrow slices. Pour the broth over everything, seal the pot well and bake in the oven at 180 °C for 1½ hours. Remove the marrow bones and transfer the stew to a serving bowl, mix in parsley, and sprinkle with parsley leaves before serving.
