Spinach Cake

Ingredients

  • 350 g flour
  • 180 g butter
  • 1 tsp salt
  • soft butter (for the pan)
  • soft breadcrumbs (for the pan)
  • flour (for working)
  • 800 g spinach leaves
  • Salt
  • nutmeg
  • 3 tbsp olive oil
  • 1 egg
  • 150 g Feta
  • 150 g cream cheese
  • 5 hard-boiled eggs

Instructions

    Sift flour into a bowl and add butter pieces. Add salt, knead to a smooth dough, adding cold water if needed. Shape into a ball, wrap in foil, and chill for about 1 hour.

    Wash spinach and remove tough stems. Blanch briefly in salted water, shock in ice, squeeze out excess liquid, chop finely, and mix with salt, nutmeg, and olive oil in a bowl. Fold in egg, crumbled feta, and cream cheese; season again. Peel the hard-boiled eggs.

    Preheat oven to 180 °C fan. Grease baking pan well and line with breadcrumbs. Set aside about one-quarter of dough. Roll out remaining dough on floured surface thinly and line the pan. Trim excess edges. Spoon half of the spinach‑feta mixture into the pan, place hard-boiled eggs on top, then fill with remaining mixture and press lightly. Roll out more dough and lay over, pressing edges well. Bake in hot oven for about 50 minutes until golden brown; cover with foil if too dark.
