Spinach and Goat Cheese Pizza
Pizza with spinach and goat cheese from Spoonsparrow: There's nothing like oven‑fresh, crispy baked pizza – now quick to make!
Ingredients
- 0.25 cube yeast
- 250 g flour (and extra for the work surface)
- 2 tbsp olive oil
- 1 pinch sugar
- Salt
- 400 g baby spinach
- 1 Shallot
- 1 Garlic clove
- 2 Eggs
- 80 g sour cream (4 tbsp)
- Pepper
- nutmeg
- 200 g goat cheese (loaf)
- 50 g Pine nuts
Instructions

Crush the yeast into a bowl and dissolve in about 75 ml lukewarm water. Knead with flour, oil, a pinch of sugar and salt until smooth. Cover and let rise in a warm place for about 30 minutes.

Meanwhile wash and dry the spinach. Peel and finely dice the shallot and garlic.

Mix the shallot and garlic with eggs and sour cream, season with salt, pepper and freshly grated nutmeg. Slice the goat cheese into rounds.

Roll out the dough on a floured surface and lay it on a sheet of parchment paper on a baking tray, forming a small edge.

Brush the dough with the egg mixture. Top with spinach, pine nuts and cheese slices, then bake in a preheated oven at 220 °C (200 °C fan‑forced; gas: level 3–4) for about 30 minutes until golden brown. Serve the spinach and goat cheese pizza.
