Spinach and Bacon Pancakes

Ingredients

  • 200 g Flour
  • 300 ml milk
  • 2 Eggs
  • Salt
  • olive oil
  • 500 g spinach
  • 1 onion
  • 1 Garlic clove
  • pepper (ground)
  • nutmeg (freshly grated)','16 very thin slices of lardo','2 tbsp crème fraîche','50 g freshly grated hard cheese (e.g., Pecorino)','oregano sprigs (for garnish)

Instructions

    For the crepes whisk flour with milk until smooth, fold in eggs and season with a pinch of salt. Let rest for about 20 minutes.

    Blanch spinach briefly in salted water, shock in ice water, squeeze out excess moisture and roughly chop. Peel onion and garlic, finely dice both. Sauté together in 2 tbsp hot oil until translucent, add spinach, remove from heat, season with salt, pepper, nutmeg, and let cool.
